2 cups plain almonds
1/2 stick butter
1/2 cup coconut oil
4 tsp vanilla
1 tbsp cinnamon
3/4 cup sweetener of choice (I used Lakanto monk fruit sweetener from Costco)
Melt butter and coconut oil in a small sauce pan. Add almonds and stir continuously on medium heat for a couple minutes.
Add vanilla, cinnamon, and sweetener, stir thoroughly for another couple minutes until the liquids thicken.
Pour everything out onto a tray, and dust with more of your chosen sweetener. Let cool, break up, and enjoy!
There are no carbs in any ingredient but the almonds themselves, so for the almonds I used this yields 2g net carbs per 1/4 cup serving.
